Easy Grain Free Pizza


Easy Grain Free pizza crust / flat bread 1 egg 3/4 cup garbanzo flour 1 cup water 1 teaspoon salt 1 tablespoon olive oil plus 1 tablespoon olive oil for the pan. Optional: 1/2 teaspoon turmeric & dash of black pepper. Garlic cloves sauteed in the oil. Preheat oven to 400. Mix all ingredients (I use my magic bullet). Heat oil in cast iron skillet. When hot, pour mix into pan and transfer to the oven. Cook 10-15 minutes (mine was 12 mins).

I make lots of variations on this simple recipe. Seriously - it is *so* easy.

Sometimes, I saute greens and veggies in the pan before pouring in the garbanzo mix to make a quiche/quick bread thing that is amazing for a savory breakfast. (cooking veggies inside the "bread")

When I get hungry for Pizza - this is the bomb! High in protien, no grains, filling. This is a quick meal for me to whip together. I have not tried cooking it in any other pan, but I imagine that you can use a greased cake pan. The magic bullet makes it so easy & simple clean up, but you can put it all in a mixing bowl and mix with a fork. Really, it is easy. You can add more spices for flavor & nutrition consider cumin, cilantro, onion and garlic.

I add turmeric and often roasted paprika. The turmeric is for the nutritional benefits - I do not detect the flavor and add it to many savory dishes including beans and quinowa. The dash of black pepper is to make the turmeric more bio available.

For vegans - the egg is optional. I prefer the texture with the egg, but it works fine without.

In the picture, I topped my pizza with Muir Glen Organic Pizza Sauce (in a can). Pizza sauce is easy to make, but when cooking for one, it's not always worth the effort. The ingredients are almost exactly what I would use.

After I took the crust out of the pan, I put some olive oil, olives, and salad greens in the pan, wilted them slightly and topped my pizza. This made a very pretty pizza and saved me from making a salad (yes, this is easier to make than salad).
